I’m so excited that I now have a chance to share a new healthy snack recipe with you, after my adventures with Whole30 and trying to reduce my sugar intake.  During that time, I have developed a love for sunflower seed butter, most popular brand for me is Sunbutter because they have an organic version with no added sugar.  Just sunflower seeds and nothing else.  And it is awesome with my applesauce and trail mix breakfast.  Or just with carrots and celery as a dip.  Or just with a spoon … 

This is a combination of a number of recipes that I’ve changed to make this awesome slice.  All my taste testers (a.k.a. my family) have said they love it.  Immensely.  And it’s so much healthier for you than the other chocolate sunbutter slice on this website.  But that one is sooo yummy.  I constantly get asked when I’m going to make it again by my family, friends and co-workers.  But, because it has so much sugar in it, I wanted to make a version that had no refined sugar in it.  So this recipe was born.

Healthy chocolate sunbutter slice

(Paleo, gluten-free, dairy-free, no refined sugar, vegan)

Ingredients

For the base

  • 3/4 cup sunflower seed butter
  • 1/4 cup coconut sugar
  • 1/4 cup unsweetened applesauce
  • 1/2 tsp vanilla
  • 1/2 cup ground flaxseed
  • 1 tsp all spice

For the filling

  • 1/2 cup sunflower seed butter
  • 3 tbs maple syrup
  • 2 tbs coconut oil melted
  • 1 cup almond flour
  • 2 tbs flaxseed meal
  • 2 tsp vanilla extract

For the topping

  • 1/4 cup sunflower seed butter
  • 1/4 cup maple syrup
  • 2 tbs cocoa powder

Instructions

For the base

  1. Preheat oven to 350F and prepare a 5x9" loaf pan with parchment paper.
  2. Mix all ingredients together and spoon into loaf pan. Note that you may have some batter left over after lining the tin. Feel free to add 1/2 tsp baking powder to the leftovers and form into cookies.
  3. Press down to have an even surface and bake for 15 mins.
  4. Remove from oven and allow to cool to room temperature.

For the filling

  1. Combine all ingredients together and spoon on top of the chilled base.
  2. Chill in the refrigerator for 1 hour.

For the topping

  1. Mix all ingredients together and spoon on top of the chilled base.
  2. Chill in the refrigerator for 1 hour.
  3. Slice when cold and serve.

Recipe Notes

Keep chilled in the refrigerator or freezer for best taste and texture.
