A yummy peanut satay sauce that can be used in stir-fries, as pizza sauces and any other dipping sauce you can think of!
My awesome husband originally made an amazing meal for me for my birthday a few years ago, using the recipe below for the peanut satay sauce on the chicken. Since then I’ve used it SO many times. I love this peanut satay sauce – useful for chicken, beef and other protein-type stir-fries; we’ve also used it as a sauce for pizzas and just general dipping. This is a real family favorite … I hope it will become yours as well!
Peanut satay sauce
(Gluten-free, dairy-free)

Ingredients
- 1 can full-fat coconut milk 13.5 oz/400mL
- 1/4 cup red curry paste
- 3/4 cup sugar
- 3/4 cups crunchy peanut butter
- 2 tbs apple cider or white vinegar
Instructions

Put everything into a medium heavy-bottomed pot and bring to a very gentle boil over medium heat, whisking constantly.

Let the mixture simmer for 3-5 minutes over low heat; be careful not to let the mixture scorch the bottom of the pot.

Taste and adjust seasonings according to personal preference.

Take the pot off the heat and use on satays/stir fries/etc, or let the sauce cool down to room temperature for later use.
