My awesome husband originally made an amazing meal for me for my birthday a few years ago, using the recipe below for the peanut satay sauce on the chicken.  Since then I’ve used it SO many times.  I love this peanut satay sauce – useful for chicken, beef and other protein-type stir-fries; we’ve also used it as a sauce for pizzas and just general dipping.  This is a real family favorite … I hope it will become yours as well!

Peanut satay sauce

(Gluten-free, dairy-free)

Prep Time 5 minutes
Servings 8

Ingredients

  • 1 can full-fat coconut milk 13.5 oz/400mL
  • 1/4 cup red curry paste
  • 3/4 cup sugar
  • 3/4 cups crunchy peanut butter
  • 2 tbs apple cider or white vinegar

Instructions

  1. Put everything into a medium heavy-bottomed pot and bring to a very gentle boil over medium heat, whisking constantly.
  2. Let the mixture simmer for 3-5 minutes over low heat; be careful not to let the mixture scorch the bottom of the pot.
  3. Taste and adjust seasonings according to personal preference.
  4. Take the pot off the heat and use on satays/stir fries/etc, or let the sauce cool down to room temperature for later use.
