This cinnamon raisin bread is Paleo-friendly, with no flour used at all, but full of juicy raisins and cinnamon
Every now and then I get a craving for bread. Specially cinnamon raisin bread. So I can toast it and slather it with some form of spread. Now I’ve tried some of the commercially available gluten-free cinnamon raisin breads and, I don’t know, I enjoy the first two slices and then it’s a struggle to eat the rest of them. So I decided to come up with my own version, because that’s what I do!
This cinnamon raisin bread is based on my Paleo bread recipe – with obviously cinnamon and raisins added. And a little bit of sweetener – but it’s only 2 tablespoons for the whole loaf. So if you cut the loaf into 12 slices, you’re really not having that much added sweetener at all. The raisins just burst with natural sweetness and the cinnamon, well, that’s what makes this cinnamon raisin bread!
I made this one weekend, sliced it up, took the photos (as you see above), had my two slices with ghee, then put it in a ziplock bag in the freezer. Halfway through that week I went to have some more, only to find that Grant had been eating it. And finished it. Now, Grant is quite a picky bread eater, especially with all my special dietary requirements, so if he loved it, you will too!

Cinnamon raisin bread
(Paleo, gluten-free, dairy-free, no refined sugar)
Ingredients
- 1 cup cashew butter
- 3 eggs
- 1 tbs apple cider vinegar
- 1 tsp baking soda
- 2 tbs maple syrup
- 1/2 tbs cinnamon
- 1/3 cup raisins
Instructions

Preheat oven to 350F and line a 8 x 5" loaf tin with parchment paper

Combine all ingredients except for the raisins well in a medium sized bowl. Depending on how thick the cashew butter is, you may need to microwave prior to attempting to mix.

Fold in the raisins until well dispersed

Pour into the loaf tin and bake for 25-30 minutes.

Allow to cool prior to slicing.
I can’t believe the cashew butter can do such wonders and think it sounds delicious. I think Grant knows the good stuff.
