Now you may be aware that I have a slight enthusiasm for anything involving the combination of chocolate and peanut butter.  From granola, to ice cream, and everything in between!  But these peanut butter brownie bites add an extra dimension.  Because who doesn’t love brownies?

So here is peanut butter and brownies.  In a bite sized piece.  What a combination.  And without flour too!  These peanut butter brownie bites are really moist and yummy … and more-ish. 

The first time I made these, I was sold.  They were so yummy that fortunately I sent most of them with my daughter to youth group, so I wasn’t tempted (and the rest of the family) to continue eating them after they had cooled sufficiently!  The original slice made this as brownies, but I used some muffin tins to make individual bites – either way, the yumminess is amazing!

I should point out that there is absolutely no flour in these little bites at all.  Just some good old fashioned peanut butter and chocolate chips, with eggs and cocoa to give that nice fudge-texture.  And the peanut butter drizzle on top?  Well, you definitely NEED to put that on there!  And feel free to add any other nuts or chocolate chips in the brownie mixture if you wish.  As always, you are only limited by your imagination (and what’s available at the grocery store)! 

Peanut butter brownie bites

(Gluten-free, dairy-free, flourless)

Prep Time 10 minutes
Cook Time 13 minutes
Servings 16

Ingredients

  • 1/3 cup creamy peanut butter 90g
  • 3/4 cup dairy-free chocolate chips 125g
  • 4 eggs
  • 1/2 cup white sugar 100g
  • 1 cup cocoa powder 85g
  • 1/2 cup add-ins eg chocolate chips, chopped nuts, etc

For the drizzle

  • 2 tbs creamy peanut butter
  • 2 tbs honey

Instructions

  1. Preheat the oven to 180C/350F and prepare the muffin tins.

  2. Melt the peanut butter and 3/4 cup chocolate chips together in the microwave or on the stove, stirring every 30 seconds until smooth.
  3. Allow to cool slightly, then beat in the eggs, vanilla and sugar.
  4. Add the cocoa and stir until smooth.
  5. Stir in the desired add-in and pour into prepared tins. Bake for approximately 13-15 minutes.

For the drizzle

  1. Mix the peanut butter and honey together and drizzle over the top of the bites once completely cooled.
