One of Grant’s favourite pasta dishes is tortellini carbonara. I found a recipe for carbonara sauce from Donna Hay that looked pretty easy to make so I decided to cook it for Grant on Valentine’s Day this year. And because I love broccoli, I added that to the sauce … and used gluten-free spaghetti for a really delicious main course. It was a winner for the whole family!
Carbonara sauce
Servings 5
Ingredients
- 2 egg yolks
- 1 C cream
- 1/3 cup parmesan cheese grated
- 200 g panchetta
- Salt & pepper to taste
Instructions

Cook pasta according to directions, drain and return to pan on low heat.

Add all the sauce ingredients and stir until the sauce thickens and coats the pasta.

Serve with chopped panchetta (and other ingredients as desired).

Sprinkle with additional parmesan and/or parsley.
