Healthy brownies?  Is it possible?  And would they taste like ‘normal’ brownies?  Well, I’m here to tell you yes, it is possible and yes, these peanut butter swirl brownies taste like normal brownies.  Actually, I think they taste better.  And so do others that tried these – one of our friends (Kat) keeps reminding me of the one we gave her and how much she loved it! 

This recipe uses Greek yogurt (or unsweetened coconut yogurt) rather than oil or butter, and while there is some granulated sugar in here, it’s not as much as you’d think.  And no flour, so if you use gluten-free oats, these are healthy, tasty and gluten free – what more could you want?  If you want to make these grain free, just substitute the oats for almond flour.  If you want to make these even more Paleo-friendly, substitute the peanut butter swirl for almond butter.  And just use an equivalent amount of coconut sugar instead of the granulated sugar.

Now I have to warn you – these peanut butter swirl brownies are very fudgey.  So fudgey, that they would be amazing warmed up with some ice cream on top.  If you’re in the market for a more cakey brownie, maybe try this recipe instead.  Or try both and let me know which one you prefer!

Healthy peanut butter swirl brownies

(Gluten-free, dairy-free)

Prep Time 20 minutes
Cook Time 25 minutes
Servings 12 pieces

Ingredients

  • 180 g low fat or fat free Greek yoghurt or coconut milk yogurt for dairy-free
  • 1/4 cup skim milk (60mL) or almond milk for dairy free
  • 1 large egg
  • 1 tsp baking powder
  • 1 cup granulated sugar (200g) or coconut sugar
  • 1/2 cup unsweetened cocoa powder (64g)
  • 1/2 cup rolled oats (40g) or almond flour
  • 3/4 cup creamy peanut butter (185g) or almond butter

Instructions

  1. Preheat oven to 180C. Spray a 8×8 inch pan with non-stick cooking spray. Set aside.
  2. Place all of the ingredients except for the peanut butter into a blender or food processor. For easier blending, place the liquid ingredients into the blender first. Blend until mix is smooth and oats are ground up.
  3. Pour batter into prepared baking dish. Batter will be thin.
  4. Microwave peanut butter for about 30 seconds. Drop melted peanut butter by spoonfuls onto the batter, swirling gently with a knife to create a marbled effect.
  5. Bake for 20-25 minutes or until brownies begin to pull away from the sides of the pan. Brownies will be extra fudgy, so be sure to wait until COMPLETELY cooled
  6. Cut into squares and enjoy!
