I found this table somewhere on the Internet a while ago and it has really helped me make all my favorite recipes again – those that call for ‘normal’ all-purpose flour and self-raising flour, I can now make gluten-free!
Rice flour and potato starch are quite easily obtainable from most supermarkets, even in Santiago, Chile (where used to live). I used almidon de mandioca (cassava starch) for the tapioca starch as I think they’re from the same plant.
