Week 32 of my US National Food Day Challenge is now over … 4 out of 7 done again this week, so again keeping to the objective of my challenge.  My laptop got hacked into over the past week so I haven’t been able to do much posting on Twitter, but here’s how I went this past week.

January 14 – National Hot Pastrami Sandwich Day

Trying to make my diet healthy, and with less processed foods (and a vegan diet for January), so putting some deli meat on some gluten-free bread didn’t seem like a good idea to me at the time!


January 15 – Strawberry Ice Cream Day

2015-01-15 Strawberry ice cream Ice cream, hey?  Well, I made a kind of ice cream, in keeping with my healthy food objective.  A banana, with strawberries, wazzed up in the blender, then frozen into ice cubes.  I then wazzed the ice cubes with some almond milk and voila!  Healthy strawberry ‘ice cream’.

 January 16 – International Hot & Spicy Food Day

For this day I made some very hot and spicy chili, with jalapeno peppers, some gluten free Worcestershire sauce, tomatoes, cayenne pepper, black beans and diced beef (not ground).  It was very spicy … but the rest of the family had it with some sour cream, grated cheese and corn chips in a nachos-style meal and said it was great! 2015-01-16 Hot & spicy chili

January 17 – Hot-Buttered Rum Day

An alcohol day again … so I sat this one out.


January 18 – Peking Duck Day

Too hard, not enough time … so I sat this one out again.


January 19 – National Popcorn Day

2015-01-19 Popcorn granola bar So I’m really not a fan of popcorn in any shape, size or variety, but when it’s part of the challenge (and you’ve discounted 3 other days in the week already), what are going to do?  Popcorn by itself is naturally healthy, so I combined it in with some other healthy, natural ingredients such as dates, almond butter, maple syrup and coconut oil and made granola bars.  They were ok, but not dazzling enough to put the recipe on this website.

January 20 – National Granola Bar Day

I have to say I had to think long and hard about which of my favorite granola bar recipes to make for this day, considering the different types of granola bars I’ve already made this month for this challenge.  And this one won – oats, raisins, coconut, peanut butter (recipe here).  I have to say, I REALLY liked the challenge this day …! 2015-01-20 Granola bar
