January 7 – National Tempura Day
Too hard to make healthy and gluten-free, so rest day for me!
January 8 – English Toffee Day
Again, I thought this would be too hard to make healthy and gluten-free, so another rest day for me!
January 9 – National Apricot Day
All natural apricot jam with some low-fat cream cheese spread, all on top of a whole-grain multi-grain corn thin. Yummy! |
January 10 – Bittersweet Chocolate Day
So bittersweet chocolate is meant to be healthy for you – right? At least those with a cocoa content > 60%? So I made my chocolate prune bars (recipe here) and used bittersweet as the chocolate chips. Very yummy, very fruity and very chocolate-y. |
January 11 – Milk Day
Couldn’t figure out how to make something with milk as the feature ingredient without just making another milkshake, so I sat this one out.
January 12 – Curried Chicken Day
January 13 – National Peach Melba Day
