Here’s a recipe for you, that maybe I’ll be the only one making.  Ever.  Because it’s strange.  Whoever heard of having apples with trail mix and bacon?  Well, this is what happens when I start looking for sugar-free alternatives for breakfast (wait till you hear what I had for breakfast today!).  Anyway, I posted a recipe using applesauce and trail mix for a breakfast option previously (here) and my homemade trail mix recipe (here).  But, I ran out of applesauce.  So I thought to myself – what if I just use a fresh apple and some almond milk.  So I did.  And loved it.  

But this wasn’t keeping me as full until lunch time – and I’ve been trying not to snack as that’s when the overeating issues start to occur.  So I thought I should add some protein.  In comes the winner – bacon!  I never used to like bacon, but I’m loving it now.  Bacon-wrapped everything in my book!  Actually, I want to try some bacon-wrapped avocados next – who’s with me?  But I digress.  I tried this with bacon, and now I just can’t seem to have it without.

Apple bacon breakfast

(Paleo, Whole30, gluten-free, dairy-free)

Prep Time 5 minutes
Servings 1

Ingredients

  • 1 apple cored and cubed
  • 1/2 cup unsweetened almond milk
  • 1/2 cup trail mix
  • 2 tbs sunflower seed butter or other nut butter of choice
  • 2 rashers of bacon

Instructions

  1. Fry up the bacon until crispy, place on paper towel to drain most of the fat.
  2. Place the apple cubes, milk, trail mix (nuts, seeds and fruit) in a bowl.
  3. Add the sunflower seed butter.
  4. Chop the bacon into small pieces and add to bowl.
  5. Mix to combine and enjoy.

  1. Great idea here! I’ve go to go shopping…You’d be semi-proud of me since I’m doing much better without sugar as well. I just don’t keep a few things out of my mouth that I should. Still looking up to you for you fortitude. When you love food as much as I do, it’s hard to give up the flavors you love. My stomach is doing so much better when I do, as well as my throat.

    1. Glad you don’t think I’m totally strange! I had a few times over the past month where I decided to let myself have some sugar, and completely overdid it. And suffered the consequences. So now I’m going to do another 15 days on the Whole30 eating plan … and Grant said he’d do it too! Wish us luck – we should be finishing just before Christmas!
