Hadn’t really gotten into the pudding things before it was National Butterscotch Pudding Day on September 19. This recipe was awesome (sorry about the photography!). You’ve just got to try it and see … trust me!
Butterscotch Pudding
Prep Time 10 minutes
Cook Time 15 minutes
Servings 4
Ingredients
- 1/2 C packed dark brown sugar
- 2 tbs + 2 tsp cornstarch
- 2 C milk
- 2 egg yolks lightly beaten
- 1 tbs butter
- 1 1/2 tsp vanilla extract
Instructions

In a small saucepan, combine the brown sugar and cornstarch.

Add milk and egg yolks, stir until smooth.

Cook and stir over medium heat until mixture comes to a boil. Cook and stire 1-2 minutes longer or until thickened.

Remove from the heat and stir in butter and vanilla.

Cool to room temperature, stirring several times. Pour into 4 individual dessert dishes.

Cover and refrigerate for 1-2 hours or until chilled.
