Strawberry coconut jam

  • 2 cups fresh strawberries diced
  • 1 Medjool date pitted
  • 2 tbs chia seeds
  • 1/4 cup shredded coconut
  • 1 tsp vanilla
  1. Process the strawberries and date (if needed) together in a high speed blender or food processor until smooth and no chunks of date remain.
  2. Add the remaining ingredients and process until smooth.
  3. Pour into container, seal and chill in refrigerator for at least 1 hour prior to serving.
