Sweet potato toast, egg and avocado

  • 1/4 sweet potato sliced into 1/4" strips
  • 1/4 medium avocado mashed
  • 2 eggs
  • 4 leaves spinach
  1. Slice sweet potato into two 1/4" strips and place in toaster at highest setting. Once popped, return to toaster for another one or two times to get required crispy texture.
  2. Fry eggs in a small frying pan sprayed with avocado oil.
  3. Spread avocado on each slice of the sweet potato toast, lay spinach leaves on top of the avocado and top with an egg on each slice.
  4. Serve and eat immediately.
