Week 6 done! 6 out of 7 – again not bad considering I’m on vacation still!
July 16 – National Corn Fritters Day

After my last attempt at shallow frying worked relatively well (with the French fries), I thought I’d give the fritters a go. All I did was I had some cooked corn on the cob, added an egg and some milk, and then enough cornmeal (polenta) to make it into something resembling a batter and shallow fried it. With no added sugar, it still tasted quite sweet. And it wasn’t a failure – yay! |
July 17 – National Peach Ice Cream Day
This day we were actually at a cottage in the Canadian lakes district and I couldn’t find any real peach ice cream. I guess I could have made it with the vanilla ice cream and peaches all blended together, but I couldn’t be bothered – I was on vacation after all! So what I did was a scoop of French vanilla ice cream, a peach chopped up and some honey drizzled over the top. It was quite yummy! |

July 18 – National Caviar Day
As I said, I was on vacation in the Canadian ‘wilderness’, and while I may have been able to find some caviar at the local grocery store, I didn’t try!
July 19 – National Strawberry Daiquiri Day
Normally I wouldn’t do anything of the alcohol-associated days, but my brother suggested a virgin daiquiri. So I stuck some ice cubes, a few fresh strawberries and a squirt of lime juice in a food processor and wazzed until smooth. Then my brother decided to outdo me and made one of his own with yoghurt, bananas and other stuff, but strangely enough my son preferred mine! I wasn’t too fond of it, and won’t do it again, but it was nice to give new things a go! |

July 20 – National Lollipop Day
For some reason I couldn’t find any lollipops, but because I am not particularly fond of them anyway, I didn’t worry about this day.
July 21 – National Junk Food Day
Ask my kids what my favourite junk food is and it would be a cross between chocolate, cookies and hot chips (French fries). Not together, obviously! But since I did the French fries last week, I thought I’d go for my favourite chocolate cookie recipe – the famous chocolate crackles (recipe here). And they turned out really yummy! Awesome junk food for the day … now to balance it out with lots of fruit and veggies! |

July 22 – National Penuche Fudge Day

I love fudge, but had no idea what this type of fudge was. The recipe that was linked to on the US National Food Holidays website mentioned stuff like brown sugar, milk, butter and nuts, so I guess it was supposed to be kind of like a toffee. Well, I had another failure. It didn’t set anywhere near like fudge-consistency, even after being in the freezer for a number of hours. This got sacrificed to the kitchen bin … anyone have any tips on making this fudge, please feel free to share! |
