Wk 30 (31 Dec – 6 Jan)

Week 30 of my US National Food Day Challenge is now over … 4 out of 7 done this week, including the celebrations for New Years Day!  This year, after my Christmas sugar splurge (and subsequent sugar ‘hangover’) I’m going to try to limit my sugar intake and eat healthier, more non-processed foods … it will be difficult to keep up with this challenge so wish me luck!

December 31 – National Champagne Day

Again, this was a day including alcohol, so I decided against it …


January 1 – Apple Gifting Day

2015-01-01 Apple & yoghurt Supposedly this day is to give an apple to someone, or celebrate apples in some way or another.  So, this was my breakfast … an apple, Greek yoghurt, prunes and flax seeds with a little bit of cinnamon for taste.  Yummo!

January 2 – National Cream Puff Day

Thought this would be just a little too hard for me to make gluten-free … and I had to do a whole pile of stuff for work today.


January 3 – Chocolate-Covered Cherry Day

Again, had a rest day – not really a big fan of cherries for some reason!


January 4 – National Spaghetti Day

In the interests of trying to be healthier, I tried cooking spaghetti squash for the first time.  A nice, robust, winter vegetable that all you need to do to make ‘spaghetti’ is roast it in the oven for about 30 mins, then get a fork and make little strands out of the insides.  It actually worked quite well.  I topped it with a homemade sauce filled with veggies – tomatoes, spinach, sweet potato, broccoli and some other herbs & spices.  It was great for my lunch this week! 2015-01-04 Spaghetti squash

January 5 – National Whipped Cream Day

2015-01-05 PB choc whipped cream pie One of those days that I just couldn’t make healthy even if I tried.  I had been hanging out to make my chocolate peanut butter cream pie again for ages, so used this as an excuse.   And it was good!  With the ugly crust (recipe here) and the basic cream filling (recipe here), you too can experience this joy!

January 6 – Bean Day

Beans … green beans?  Chickpeas?  Black or pinto beans?  What to do, what to do?  So I made some chili lemon tacos with chicken for the rest of the family, and just some other beans with the same flavoring in a spinach, avocado, corn and tomato salad for myself.  Doesn’t that look nice and healthy? 2015-01-06 Bean & avocado salad
