Pizza muffins

This was part of a challenge that I kind of set for myself, after watching the Great British Baking show, and finding out all the nuances of trying to make multiple identical baked goods.  I think you can always make one item that looks photo-worthy.  Two, most of the time.  Three … well, then you start getting into the discarding more than you keep for photos.  

Normally I don’t post recipes that use a box mix, but these turned out amazingly good.  So good, that I wanted to share them with you all!I know I didn’t nail the identical-ness this time round, but what it lacks in aesthetics, it more than makes up for in taste.  I used a box of Glutino gluten-free muffin mix that I managed to buy with a coupon (love the coupon culture here in the US!) and wanted to make something savory for a change … I have so many other sweet things I want to make!

You can use whatever ingredients you would normally put on a pizza in these … I just put together whatever we had in the fridge at the time and gee, they were yummy!  Feel free to experiment and let me know what you used and how they tasted.

Pizza muffins

Prep Time 10 minutes
Cook Time 25 minutes

Ingredients

For the base muffin

  • 1 box muffin mix I used Glutino gluten-free
  • 1/2 cup shredded cheddar cheese I used Daiya dairy-free, plus some for sprinkling on top.
  • 1/2 cup sliced ham chopped
  • 1/2 cup pineapple chunks drained and finely chopped
  • 1/4 cup sun-dried tomatoes finely chopped
  • 1/2 cup spinach finely chopped

For the sauce (you only use about half of this)

  • 1 tin tomato sauce
  • 1 tbs basil
  • 1 tbs oregano
  • 1 tbs parsley

Instructions

  1. Preheat oven and prepare the muffin mixture according to the instructions on the box.
  2. Add in the cheese, ham, pineapple, spinach and sun-dried tomato.
  3. Prepare the pizza sauce by mixing together all ingredients. Use approximately half of this mixture in the muffin mix but don't mix too much. You are aiming for a kind of swirl effect, so you can still see some of the 'normal' muffin color.
  4. Scoop into prepared muffin tins and add some shredded cheese on top.
  5. Bake for 25 mins or until a skewer comes out clean.
  6. Eat either straight away or allow to cool and have cold (like cold pizza!).
