Peanut butter pudding

This peanut butter pudding recipe goes along with the chocolate pudding recipe, originally from a friend’s Facebook post.  The peanut butter part of it was so yummy, I tried to incorporate it into my ultimate chocolate peanut butter slice, but it didn’t really have the right consistency for a slice.  But as a pudding recipe, with a dollop of cream on top – very yummy!

Peanut butter pudding

Cook Time 10 minutes

Ingredients

  • 1/2 cup sugar
  • 5 tsp cornstarch
  • 1 3/4 cups milk
  • 1/2 cup cream
  • 1/2 cup creamy peanut butter
  • 1 tsp vanilla extract

Instructions

  1. Whisk sugar and cornstarch in a medium saucepan to blend.
  2. Gradually whisk in milk, then cream.
  3. Whisk over medium heat until mixture comes to boil, then boil until thick, whisking constantly.
  4. Whisk in peanut butter, boil until thick again, whisking often.
  5. Remove from heat and whisk in vanilla.
  6. Pour into prepared dishes and chill in refrigerator for at least 2 hours.
