Peanut butter & seeds filling a sweet Medjool date, dipped in homemade dairy-free chocolate – these peanut butter chocolate dates are an awesome snack!
You know you’re a foodie when … That was a question raised on Instagram recently and my reply was ‘You know you’re a foodie when you wake up in the middle of the night dreaming of food combinations. And then get up to make them’. Ok, so I haven’t actually gone through with the getting up to make things in the middle of the night, but I have definitely woken up (or couldn’t get to sleep) because I was contemplating new recipes. And this recipe for an awesome healthy snack was borne in my brain when I should have been thinking of work (sorry boss, but I did finish my work before trying this at home!).
I guess you could probably use just straight peanut butter to fill in your pitted dates, but I wanted to make it a little bit more nutritional. So I based it on my healthy Reeces peanut butter cup filling. And I guess you could just melt some chocolate (dairy-free if needed) to dip your filled dates, but I must just be a glutton for punishment. So I made my own. And this combination is AWESOME. The only problem is these peanut butter chocolate dates are best straight out of either the freezer or the fridge. But I had them out for a while when I was trialing the recipe, and no one complained about the little amount of melted chocolate on their fingers. I mean, who would?

Peanut butter-filled chocolate-covered dates
(Gluten-free, dairy-free, vegan, no refined sugar)
Ingredients
- 12 Medjool dates
For the filling
- 1 tbs 14g coconut oil
- 1/2 cup 125g crunchy peanut butter
- 1 1/2 tbs 12g flaxseed meal
- 1 1/2 tbs 15g chia seeds
For the chocolate
- 1/2 cup coconut oil melted
- 1/2 cup maple syrup
- 1/2 cup cocoa powder
- 1/2 tsp vanilla extract
- 1/4 cup almond milk
Instructions

Pit the Medjool dates and set aside

Combine all the ingredients for the filling together and spoon into cavities in the dates.

Combine all the ingredients for the chocolate together in a separate mixing bowl.

Thread toothpicks into the dates and dip into chocolate.

Store on parchment paper in the freezer until the chocolate hardens.

Serve immediately after removing from freezer and store leftovers in the refrigerator or freezer.
Recipe Notes
There will be leftover chocolate from this recipe - keep in the freezer for use as chocolate chips in cookies, or fudge, or as frosting.
