Healthy muesli bar slice

  • •2 cups rolled oats
  • •4 crushed Weetbix
  • •1 1/2 cup juice any flavour
  • •1/3 cup honey
  • •1 egg
  • •2 cups dried fruit and nut mix


  1. Combine juice and honey in a small saucepan, and simmer over medium heat for around 10 mins until it thickens and forms a thin syrup.
  2. Combine oats, Weetbix, dried fruit and nuts in a bowl. Add the egg, and the juice and honey syrup and stir to combine.
  3. Bake at 180C in a 18 x 28cm tin for 20-25 mins until golden. Cool in tin, turn out and cut into bars

Recipe Notes

I have used a combination of nuts, seeds and dried fruit in this recipe with great success. Basically whatever you have available will work - as long as you've got enough syrup to bind it all together. Make sure you press it into the pan really well before baking.
